Slow Cooker Pork Recipes | Pork & Cider Casserole

Yum!  This slow cooker pork casserole is a blend of some of my most favourite slow cooker ingredients, sweet potatoes, green apples, apple cider and herbed pork - it's the perfect winter warmer dinner!  It's a great one-pot meal as it already has the root vegetables in it, so to serve, all you need is a side of steamed greens and some crusty dinner rolls to soak up the gravy.

Pork and Cider Casserole | Slow Cooker Pork

Cook on low for 7 to 9 hours
Serves 4-6

    2 medium Kumara or sweet potatoes, peeled and cut in to bite sized pieces
    2 parsnips or carrots, peeled and cut in to thick rings
    1 onion, peeled and diced
    1kg boneless pork pieces, chops or cutlets of an even size
    1 large Granny Smith apple, peeled, cored and coarsely chopped
    1/4 cup flour
    1/2 tsp each dried sage and thyme
    1 cup apple cider
    Season with salt and fresh ground pepper to taste

    Layer sweet potatoes, parsnips, onion, pork and apple in your slow cooker.
    Stir flour, salt, sage, thyme and pepper in a small bowl to mix. Add cider; stir until smooth and add to slow cooker.
    Cover and cook on low 7 to 9 hours or until pork and root vegetables are cooked.
